Chocolate Orange Cupcakes- These are the best cupcakes

Terry’s Chocolate Orange Cupcakes

These are the best Chocolate Orange Cupcake Recipe in the world. These Chocolate Orange Cupcakes are irresible- we fight over the last one!

I made them for my daughters Fox Birthday Party– the adults pinched most of them!! Too delicious for the children! HA

Terry’s Chocolate Orange Cupcake Recipe

Ingredients

125g softened unsalted butter or Stork SB
125g golden caster sugar
2 beaten eggs
150g sifted self-raising flour
1 tsp baking powder
4 tbsp orange juice
2 tsp orange extract
140g melted dark chocolate with orange (Lidl sell a good one)
1 bag of Terry‘s Mini Chocolate Orange Segements

Icing- Betty Crockers Chocolate Fudge and Vanilla Buttercream icing and 1 tsp orange extract

Equipment & Oven Settings

Turn your oven onto temperature 180C/ Gas mark 4

Scales

Food Mixer or Mixing Bowl

Wooden Spoon

Spatula

Bun Cases

12 holed cake tin

 

Method

  • Preheat the oven to 180°C/ Gas 4/350°F
  • Measure all the ingredients
  • Line a 12 hole cupcake tin with cupcake cases. ( I used orange cupcake cases)
  • Start to melt the orange chocolate
  • Place the butter and caster sugar in a bowl and beat (either with a spoon or mixer)
  • Mix the baking power and flour together
  • Slowly add a little of the eggs with a desertspoon of flour/baking powder mixture
  • Slowly add the orange juice and orange extract and stir
  • Add the melted orange chocolate and mix. The mixture should be smooth with no lumps
  • Use a desertspoon and smaller spoon to spoon the mixture into each cupcake case. Try to make the mixture flat.
  • Place in the middle shelf of the oven and bake for 15-20 mins.
  • The cakes should be golden and spring back when touched gently. Insert a skewer and this should come out clean.
  • Once cooked remove the cupcakes from the tin and place on a wire rack to cool
  • Once completely cool decorate with icing and chocolate orange segement

Icing & Decoration

  • Either prepare your own icing or for speed use ready made buttercream icing. I used Betty Crocker Chocolate Fudge and Vanilla Butter Cream (with a few drops of orange extract to make orange flavour)
  • Use a piping bag with a large flower nozel. Fill the piping bag with the  2/3 chocolate buttercream. Flatten and then open the bag and add the 1/3 orange buttercream
  • Pipe a swirl of the mixed buttercream
  • Add a mini Terry’s Chocolate Orange segmet
